Overseeing our inspired team of world-class chefs is Executive Chef Jordi Vallès. A native of Barcelona, he expertly presents the new style of Spanish cuisine with his notable culinary talents that have been refined working with the great masters at such Michelin Star-rated restaurants as El Bulli.
The St. Regis Bal Harbour also welcomes Antonio Bachour – a rising star in the pastry world – as Executive Pastry Chef. He has trained in Paris with renowned Chef Philippe Givre at l’École du Grand Chocolat Valrhona, and was named one of 2011’s “Top 10 Pastry Chefs in America” by Dessert Professional. His creations have been featured in Gourmet and Alan Bateman’s cookbooks.

Our contemporary Fresco serves up an eclectic menu with South American flair in a magnificent oceanfront setting – and just steps from the beach.
Enjoy delectable fare, cooled by a refreshing beverage. In addition to drink specialties that meld perfectly with the beach breezes, there is a full selection of wine, champagne and specialty blended cocktails. Honoring a long-standing tradition, each St. Regis creates its own signature Bloody Mary—a variation on the original St. Regis recipe dating back to 1934. The St. Regis Bar is the ideal setting for before or after dinner drinks and tapas inspired appetizers. Paying homage to St. Regis tradition and the infamous King Cole Bar in New York, our bar is graced with a commissioned mural – “Eyes of the Stars” by Santiago Rubino of Miami – a magnificent piece of graffiti mixed with Art Deco and depicting the modern vision of St. Regis.
